This week I received an invitation to my cousin Rachel‘s bridal shower in Chapel Hill, NC. Sadly, I can’t make it to the shower. However, each guest was invited to share a favorite recipe. I thought I’d share my very own meatloaf concoction, which I call “Christy’s Magical Meatloaf,” or, alternately, “Christy’s Amazing Meatloaf!” It’s super healthy, super tastey, and guaranteed to get your little ones to consume veggies.
Here’s what you’ll need:
- 1 pound ground turkey
- 1 carrot, peeled and chopped
- 3 cups fresh spinach, washed and chopped
- 1 small onion
- 2 stalks celery, chopped
- 1 cup shredded parmesan cheese
- 2 small eggs or 1 large egg, beaten with a dash of milk or half-and-half
- 2-3 cups breadcrumbs (less for moister, more for firmer)
- 1 packet dry onion soup mix (substitute: italian seasoning, salt, pepper)
- 1/2-3/4 cup fresh parsley, chopped
Here’s what you do:
- Preheat oven to 400
- Mix all of the above in a large bowl
- Grease a loaf pan (I use olive oil)
- Fill loaf pan with mixture, forming the top into a rounded loaf shape
- Bake for 1 hour
